No idea about headsets, but there are some other options for stems, have a search for Canyon, as they've been using 1 1/4" stems for a while.
I know there is a (was?) FSA stem that is 1 1/4" shimmed to 1 1/8", and I think the Specialized ones that are shimmed to give custom angles are a 1 1/4" bore too. Think Syntace did some too.
What length stem are you looking at?
