Hats, check out bike routes RV8 and RV7 on the Ardennes maps for day one out and back to Malmedy..
Not sure we'll hit all the monumentals south of Liege, but see what you can do..
Day two to Bastogne needs to go through La Roche en Ardennes either out or on the return leg..
