But YouTube has a million triathlon transition videos, with tips ranging from pretty simple to insanely difficult, but elastic laces, and rubber bands holding your cycling shoes in place are a pretty good starting point...
Like all events there will be a massive range of abilities and kit, in my first tri there were two people who spent a total of 18 minutes each in transition....
In terms of tri bars, you can put them on anything, didn't edscoble put some on a brompton?
Not sure where you've seen brakless tri bikes - pursuit bikes on the track maybe?
