When we rode to France we literally just had panniers on the rear rack (both of us) then split the tent and shared it (one had poles, other tent)
I'd like to go a little lighter if possible. Last year when we did cycle around East Anglia (just over 300 miles 2.5 days) I tried to pack light but again ended up taking the proverbial kitchen sink, although we didn't use a tent - just bivi and bags.

Next year will be the true transformation and will be packing as light as possible, not just because It's fun but because my partner I'm riding with will cope much better without all the weight on the back of the bike.
I may even plan a weekend away later this year, just to see how light weight I can actually go.
