friction shifters can shift any amount of gears from 2 to whatever the manufacturers think is required...
A cassette would indicate that it slides off the freehub (Either hyperglide or Uniglide) as opposed to screw off in which case it'd be a freewheel.
A 7 speed cassette hub is restricted to 7 speeds only, a screw on hub that has a 7 speed freewheel in theory can be fitted with a 5, 6,7 & 8 speed sprocket
