Just reporting back on taking bikes on Belgian trains, albeit going from Bruxelles Midi to Antwerpen Centraal, not Oudenaarde: I did it on Saturday, and it was very straightforward. Buy the bike ticket, fill in the blanks (date and route) in order to make the bike ticket valid. Approach the train manager on the platform and ask where to go with your bike (he was standing right in front of it, in my case), roll in, park the bike, sit on the folding chair in the bike compartment and off we went.
One note of caution: Judging from the new-ish train that I took (and various trains, I assume, have different configurations), there is nothing intended to lock the bike to unless yours is the only bike in there, in which case, you could lock one wheel to a pole that supports a divider wall. Therefore, you should plan on staying with your bike, which is the easiest option anyway.
