^^^^Le Cassoulet's tartare is all wrong, sorry. No anchovies. Dump the almost entire tomato too. The cornichons should be chopped finely and bound within the meat. Awful presentation, looks a mess.

tomato??? there isn't any tomato.. there's an egg shell with a yolk in it and radishes to one side. If you look closely you see there's already little freckles of green in the meat, it's already there.
