Like smallfurry said, 70mm stem is short. I'm about your size and ride a 54cm - sometimes think I could go smaller (I've got stumpy legs), but definitely not bigger. With 54cm you'll have more options with stem length to get a perfect fit. Sounds like you're already struggling to bring things in at 70mm with nowhere to go? Just go back and see the same guy, say thanks for the advice but turns out he was wrong. If you bought a frame size on his advice I would have thought he's kind of obliged to sort you out - 60 miles is a test ride.
