I've been to Kandersteg and Lauchernalp in Switzerland; Kandersteg is great for complete beginners but once you are confident you'll soon run out of runs. Lauchernalp is much bigger in comparison and also great for someone on their first week of skiing. Plenty of gentler slopes with some pretty difficult reds/blacks for the more experienced among you. Also Both times I have been to Lauchernalp there has been at least a metre of fresh powder :) Both resorts are smaller than most of the main French ones though.
In France I've been to Alpe d'huez, which was also great for beginners as well as having the longest black in Europe (very very nice run, follows river along the valley for a good few km towards the bottom).
Les Arcs which has a large ski area and lots of good runs.
Val Thorens which has plenty to keep the more experienced happy, but also seemed to have lots of good nursery slopes (part of 3 valleys so has a massive ski area).
St Lary Soulan - one of the largest ski areas in the Pyrenees, longest red in Europe (I have spent the best part of 3 weeks skiing on this one run, it is that much fun), lots of Biscuit-Stealing-Spanish.
And Peyragudes - another in the Pyrenees, quite small but had some very nice runs, not many people.
