I'm currently eating my most adventurous vegan food yet:
Italian-japanese fusion.
Saffron! found it in the back of our cupboard Risotto-fully vegan risotto- it was ready spiced we don't have saffron at home, with tofu a la henry:
basically get some soy sauce and some brown rice vinegar, a bit of coriander and some paprika and go nuts.
pour in some vegetable stock, add broccoli, peppers and mushrooms galore, and then see what happens.
It is goooooooood!!!!
its also leftovers from last night and I'm at my desk, which is not.
