Hmm, i'm not sure that adding spacers will fuck the Chainline actually, i think that was me chatting shit.
Squeezing dropouts isn't difficult at all. What's considered difficult is getting a good chain tension, as well as setting the wheel straight in the frame, whilst worrying about tightening up each side evenly. It's definitely more of an arse than just having a 120mm frame, but it's nothing to worry about.
Cold setting in regards to frames rear spacings, is changing the angles of the forks and seat-stays by bending them from 130mm to 120mm for example. Some people say that this can be achieved by doing what i have stated above (simply tightening a 120mm spaced hub, into a 130mm frame). I'm not so sure about this, because i dont think that by changing the angles by 5mm on each side is enough to push the steel past it's elasticity limit. Basically, i wouldn't worry about cold-setting, i'd just try and tighten the bolts on either side of the rear hub evenly. And if you're still worried about it, buy a cheap spacer kit from your LBS / Ebay.
