Having ridden on canal paths and bridleways quite a bit, I would advise going for a hardtail with stiff suspension on the front forks. You don't want a lot of travel in the suspension as this will kill your efforts on the climbing.
I ride a Kona Hahanna off road with skinny cross style tires. Unless you're planning on going over properly loose surfaces, don't mess about with fat tires.
