I prefer a larger gear on flattish century rides, to keep the weight off my arse, and make it easier to stand up and stretch now and again eg. London to Southend and back (115 mile trip on 81" / 46x15).
Done hillier rides eg London to Brighton and back on 46x18 / 67.5" - I usually gear according to the steepest known climb en route, based on the fact I NEVER EVER quit on a hill... unless I'm bonking my tits off.
