This is a brilliant idea! 'Less east' are the Carpenter's Arms on Cheshire Street E2 (dunno how people feel about proximity to Brick Lane though), The Royal Oak on Columbia Road. Also, around London Fields is The Dove on Broadway Market, which has a massive selection of beers. More east is The Lauriston on the west side of Victoria Park.
And although it's a bar not a pub, Bar Music Hall on Curtain Road EC2 has massive windows to watch bikes from and is very quiet during the week.
