1 - the curent cranks / spider / chainring should be fine. Is the chainring worn out? Are the teeth shaped like waves as per Sheldon's guide to worn-out chainrings? can you flip the chainring over to prolong its life?
2 - 36h should be stronger, but with modern materials a 32H 3X is the strongest wheel you will probably need. (Something to do with the angle between the spoke and the hub flange)
I think the number of spokes will affect stiffness more than strength.
Do you plan on carrying a LOT of weight on the back? pannier? fat arese?
3 - yes, yes.
Goldtec hubs can have parts swapped out to change the OLD (120mm / 135mm / etc) so it will not be obsolete when you decide to change your frame.
