If you're going to have a white saddle, make sure you pay peanuts for it. Spending too much will result in a bike that only gets ridden on sunny days in July.
I'm all in favour of white saddles and bar tape, though. I got my Selle San Marco Corsaire for £2.30 on eBay and I've been riding on it for about four months now. Someone described it as "cream-coloured" the other day. They don't stay white.
