You can prune them right back before they start growing again in spring.

Thanks - ours is pretty mature + tall (15ft) so I think we need to shape it not just trim to a stump. I had a go the first year we were here then a tree surgeon (looking at a bigger tree in the same garden) told me I'd done it completely wrong so now I'm not sure why/how!
