More than enough to fill a weekend without even crossing the river, but Windsor is right there if you must

Thinking about places for a long weekend away in mid October. Went to Lisbon at the same time of year a couple of years ago and loved it.
Requirements are: easy to get to from London, relatively inexpensive, vegan friendly, stuff to do and see (we're not beach holiday people).
Any left field suggestions?
