What actually happens if you pour a whole pint of Guinness in one go?

When I worked in the Cornerhouse bar in Manchester (RIP) we used to do exactly this.

The two part pour is 'pint theatre' and it's pretty hard to tell the difference between this and one done in one shot. Source: on the rare occasions I drink Guinness I ask them to do it in one
