I've had the hdmi plugged directly into the laptop today and it's been fine. So there is obviously some issue with leaving the thunderbolt in - I just don't really have the opportunity to test if it's the laptop or if my client's VM in conjunction with the laptop.
It's a Dell Latitude and after a brief look online I came across some chat about a bios update with xps13's, but stopped there. I doubt I'd be able to fix it and I'm not sure how popular I'll be if I raise a ticket with IT.
It's not the end of the world, but as I need headphones for calls, and I've realised having my keyboard plugged in is easier, I've now got 4 things to plug/unplug.

This is what I come back to. Need to remember to plug the hdmi in directly before lunch to test it out.
