Made carbonara with eggs from my own chooks and home cured and smoked bacon.
I thought I had reggiano in the fridge - but found that I was out. Emergency replacement was extra mature Gouda.
Italians will be spinning in place when I tell you that it is sooooo much better. Give it a go.
