We took a used BA Fly Creek UL2 to Scotland in October. It was superlight and worked well but if we're going in winter, we want more space so that we can change clothes and cook under cover in bad weather (the Fly Creek had barely any cover apart from the sleep space).
we just got this one: https://www.backcountry.com/big-agnes-tiger-wall-ul3-bikepack-tent-3-person-3-season?s
as the only bike packing I'll be doing for a while is with the 14 year old boy. Gonna do some trips with the little ones this Spring, but they'll be BBs.
