I think I'll just buy the mesh hardware, start by trying it with separate SSIDs and if that doesn't work try what you suggested.
Or maybe I'll delegate the whole thing to my nephews who are the main complainers about the existing setup and also, since the grandparents are wrapped around their little fingers, the most likely to get the ok for any changes.
