I was planning to bottle my Belgian dubbel/trippel parti-gyle today before I head to the US to see family tmo. But I still have a small amount activity on the airlock after 9 days, and time is very tight given the packing and other details that need sorting out. Should I:
1) leave as is in the fermenting bins until I get back in 2 weeks at low 70s temp
2) decant into something smaller that will fit in the fridge while I am away
3) htfu and stay up late to bottle it (haven’t checked if I have reached target FG but I don’t think it will be far off).
Any advice?
Also if I choose 3 and there’s still activity, do I still need to re-pitch yeast for bottle conditioning?
