Wolkite near the Arsenal stadium in Islington is probably the most highly regarded.
Merkato and Addis on Caledonian Road are good.
Hamer on Goldhawk Road (Shepherd's Bush) is really good and there are a few others round there that I've not tried.
Blue Nile in Woolwich is Eritrean rather than Ethiopian but it's also great, the restaurant itself is really interesting (it's in an old butchers with lots of the old fittings like the tiles and meat hooks) and the owners are lovely.

There's one in Camberwell called Zeret Kitchen. Not been but excellent reviews
