The 2.6 versions of Vittoria MTB tyres aren't just wider versions of the 2.1/2.25/2.35s; the rubber is thicker, on some they change the tread blocks too and so the weight increases a bit. They're probably perfect.
I personally like Spesh as they seem to last a long time without degrading under hard riding. But I've just told my mum to buy some Vittorias as they are faster rolling and she thinks to drift an MTB is to wander across the bridleway by mistake...

Yeah, they'll work. I have a brand new one here for the gravel bike when I kill the rear Venture.
Then again being a relative noob should I get something more grippy and less fast rolling / speed oriented? I can always stick fast rolling tyres on for racing and use more knobbier, thicker more durable stuff for everyday use - thoughts?
