We've got a pretty basic metal up and over. At the top of the door are rollers that follow a track along the ceiling. When we go away I put a G clamp on the tracks on both sides right up at the roller so it can't be opened. Seems pretty secure I reckon.
Day to day it has a central lock, and handles in and out to open.
In the garage I have a couple of ceiling hung brackets for storage that hang lower than the space the door opens into IYSWIM.
