It's basically kebab tartare which, frankly, is as big a risk as it sounds. I have had it three times. Once in middle east and it was astounding. Second time in middle east and nearly died (exaggeration - but basically the opposite of #claybuttgate). Third time I did at home with fancy meat and very clean everything and it was very meh.
