It is to let out the co2 produced so you dont have to "burp" the jars daily. And you are less likely to get contamination etc. Also there is a glass weight to keep everyhting below the surface. I dont know where mine came from but they fit any wide mouth mason jar.
Searching on amazon for fermentation kit / weight / wide mouth should get you something.
