A bit dubious about doing that as the 10mm seems like it locks down.

Could be right, but not going to mess with it, as might thread something.

That's what the 10mm is there for….it's basically a locknut that allows you to remove the crank (with the 8mm) without needing a crank puller. If you take the 10mm out, then the 8mm…..you won't be able to get the crank off without a puller! (Hope that helps!)
