  • Yeah, that would be my suggestion. Also check it's on the lowest setting. There's chuff all fat in topside so v low and slow should get you there eventually

  • I have had beef shin on the go since 7pm. Still nowhere near being cooked. Will probably just drop temp very low and leave overnight.

    It’s tomorrow night’s meal.
