Hi, I have a similar issue, was planning to convert my bike from 10s to 11s, but am surprised to find the ultra bargain DT 240s wheels I picked up are 10s...
So in simple terms, what does the conversion kit do? Is the freehub part of it the same as a normal DT 11s freehub, and the difference only in the end cap?

yes, it just swaps out. if you're dt swiss hub is the ratchet version you actually just pull the end cap off, then pull the freehub off and swap the two out for 11 speed versions. There's no tools required other than that to remove and replace the cassette lockring. it really is a brilliant design compared to usual freehub pawls

practically it's a very simple job. With the 240s hubs the freehub just pulls off so you don't even need any tools, other than to remove the cassette.
basically the 11 speed freehub is slightly longer than the 10 speed, so in order to bodge convert it you'd have to mill off some metal from the inside collar of the freehub. like this
I'd just recommend the correct conversion kit...
