Yeah - they'll adjust to the thinner rotor and the thicker rotor will no longer fit.

The answer is - use the same hubs and the same rotors across all wheelsets.

I just force the calipers open with the disc when I've tried to remove lever throw by closing pads up with the wheel out. Worked thus far.
