I stick 120 psi and then adjust the pressure of the trainer so that it 'feels' as though the tyre wouldn't slip. This normally gets it close enough for the calibration to work and I can then adjust it to be central on the calibration - normally just a quarter of a turn at a time.
I have had the problem you describe from time to time but a couple of minutes of playing normally sorts it out.
