Drums of cables (stainless), keep at least 8 sets of each type of brake pad in (stick with better quality, if people want cheap tough!), smattering of spokes in common sizes + box of nipples, hub bearings and loose headset bearings, tubes of regular sizes, tyres of regular sizes (more commuter/road/mtb as req), etc.
BOLTS! YOu can never have enough bolts and 'misc parts box no.4' will be a popular ratch. Buy one of them allen bolt boxes, a box of washers, a box of nuts and zip ties. Its a very false economy not buying boxes of new bolts, you'll spend x hours per month ratching for that one elusive bolt that your sure you have.
