I've been baking from the same method for a few times now, but the bread never rises as wanted when I bake it. The method is taken from Tartine, but I'm using yeast instead of a starter.
Method:
450g white quality flower
50g whole wheat flower
10g salt
350+50g water
40g fresh yeast
1 - mix 100g vatten, 38C, with the yeast
2 - mix 350g vatten, 27C, incl yeast with all flower, knead by hand
3 - rest 30min
4 - add 50g water, 27C, + salt
5 - Rise for 4 hours, fold every hour
6 - Shape bread on table, rest for 30m
7 - rise in basket for another 4 hours or until ready
8 - bake for 20min dutch oven 260C with lid
9 - another 22min dutch oven 230C no lid
The bread comes out delicious with a great crust, but it hasn't risen at all in the dutch oven. Reading books, it's due to not cutting the bread with a razor when it goes in, but I do. Thinking maybe I let it rise too much for being a yeast bread?
