  • The only recipe I found for chocolate panettone had the ingredient "chocolate panettone" and the instructions "add the chocolate panettone".

    It was a James Martin recipe.

    And we all know what that means.

    I might just go with a fruitless panettone with chocolate chips and a spoonful or two of cocoa powder.

    I'm guessing I'll need to add it after the yeast is fully activated, so that it doesn't kill it dead.

  • I made pumpernickel recently and that mixed yeast with cocoa powder and it was fine. I can't remember the order in which they went in, you might want to have a look at some pumpernickel recipes to get a sense of how cocoa and yeast do or don't get along. Personally I would just do a regular panettone with choco chips and some melted choco icing on the top.
