I'd get rid of miche cranks because they're not very good (and square taper is a bit of a pita) and go for something with an external BB, Sram omniums are great if your budget will stretch to them, they also include a BB.
I'd also go for road drops and brake hoods because they'll give you the same positions as bullhorns plus a couple of extra, they also looks a lot more at home on a practical bike.
As far as I can see you've not listed a brake, would you go for cable or hydro?
Edit: Also realise that the fork you've listed has a higher a2c than the fork an FXE is meant to use, this will make the angles slacker and BB higher, should be fine in use.
Also if it's a daily why not use 28mm or larger tyres? The frame will definitely fit up to 32mm and you can get suitably light ones, it will improve the comfort and grip to no end.
