Wouldn't the derailleur be too narrow with the 8 speed chains?
I've never had this issue using 105 rear mechs with 8 speed chains, but then again they are specified as suitable for 8,9 or 10 speed drivetrains unlike the mountain bike derailleurs.
Looks like I'll just have to continue living my life with a bit more chain noise.
