Great build, nice to see a old CX-steel being put to use!
Now I'm a bit late to the party but I'd really look into mini-v brakes instead of going through all the hassle that is cantilevers. This comes from me who had "the ultimate setup" aka Paul neo retro up front and touring in the back for heel clearance. Belive me when I say that stopping wasn't an option with those things. More like scrubbing of some speed, even worse on carbon rims. Overcooked som many hairpins due to not being able to slow down enough in time. And I spent hours and hours fiddling with toe in and cable tension/hanger position. Nothing helped.
I went with the cheapest of Tektro-knock off's off ebay or maybe xxcycle (~10$ per brake incl hardware). Now modulation and actual braking can ensue, even in mud/wet conditions! I can OTB with one finger on the brakes if I wanted to, just to try and make clear of how much more power I have compared to "the best" cantis. A nice bonus is that you automagically eliminate all brake shudder you might/might get up front with cantis. Just a thought on a possible and really cheap upgrade.
Otherwise A+ on a great build!
